Erik's Turkey Burgers
Ingredients
- 1 lb ground turkey (not ground turkey breast!)
- 1/4 cup shredded mozarella
- 1 tbsp soy sauce
- 1 tbsp mayo
- 1/4 tsp garlic
- 1/4 tsp onion

Preparation
- Mix all your ingredients in a medium bowl. Get in there with your hands to ensure there are no concentrated pockets of any one ingredient.
- Form 3 burgers by hand, equal size, and put them on a broiling pan.
- (Remember to wash your hands!)
- Broil for roughly 6 minutes.
- Flip the burgers.
- Continue to broil for roughly 6 minutes.
- Use a food thermometer on the thickest burger, so the tip is right in the middle of the burger. If it's >165 degrees F, your burgers are done.
- If it's BELOW 165 degrees F, put the burgers back in. Wash off the business end of the thermometer with soap.
- Broil for 2 more minutes and test again. If it's still below 165 degrees F, wash the thermometer and repeat until you get a reading over 165.
You're skating the line with internal temperature here - you need the internal to be over 165 F, but the lower the temp gets over 165, the better. Ideally, you take them out as soon as the center of the thickest burger reaches 167 F.
